We re-create the pizza by adapting the pizza rules in a contemporary way. The techniques of bakers are used and the sourdough is produced with different shapes and structures. Contemporary pizza is the link between a fresh raw material and a sourdough base. The balance between topping and base is fundamental, which is why our contemporary pizzas are so different:

Nuvola di Grano - Wheat Cloud

Type of soft and very voluminous dough. Made from Type 1 ground flour using the 18/20 hour fermentation technique to guarantee a crispy skin on the outside and improve softness on the inside. This type of dough is especially recommended if you want to sharing pizzas!

Tonda Romana - The Roman Round

A type of dough that is reminiscent of the classic Pala Romana, it is made with a high degree of moisture and made from ground stone flour type 1 and whole grain flour. A long fermentation of the dough allows a final fragrant and crispy consistency to be obtained. In our version, this is served with around eight pieces.

Doppio Tranch - Double Tranch

The dough is similar to the Roman round, but with different processing. It’s a reinterpretation of traditional Roman filled focaccia that looks like a crispy double layer. The crispiness is improved! The double tranch is served in four pieces.

Tonda senza lieviti aggiunti - Round without added yeast

(available from Friday to Monday)

Old dough technology, called starch hydrolysis, in which a spontaneous fermentation graft is carried out without the addition of yeast. Result? Intense, well-defined taste, wheat aroma and a surprisingly voluminous edge. The pizza is served in 6 pieces.

La pizza Roco's

The pizza that has distinguished and accompanied us for over 25 years, baked in a pan in a wood oven and served as a piece. Dough made from soft wheat flour ” OO ” for the natural sourdough.
